wasn't sure if I should post this or not considering the lack of photos I got from the meal, I decided I would because I think it's too good to pass up! By the time I went to try to take some photos, Jose was already enjoying the meal. 

Jose's really big on the buffalo wings at Buffalo Wild Wings so naturally I went to Pinterest in search for a good at home recipe for wings with the buffalo taste, not necessarily a wing that would replicate the ones from BWW.  Then I paired the wings with two of his favorite sides, baked potato and asparagus. I finished it off with Banana Bread and he made us some coffee.

The WingsSkinny Hot Wings is a recipe by Skinny Mom. Lower in calories than your typical wing. Shhhh, don't tell Jose! He said they were delicious, not sure he noticed they were "lower in fat and calories". These were surprisingly easy to make, except for the fact that all four of the foods I prepared were baked, the kitchen felt like a furnace.

The Asparagus: These were simple enough, I cut off the bottoms, placed an even layer in a pan, drizzled some oil, added a little salt and pepper and baked for 8-10 min at 400 degrees. I found a recipe for you in case you want some expert knowledge! Oven Roasted Asparagus, I skipped the orange.

The Potato: Scalloped Hasselback Potatoes-These gave me hell. Looked super easy in the photo but it was difficult to cut the potato in slices without cutting all the way through. I didn't have time to freeze the butter so it was super soft and trying to insert slices into the cuts I made was extremely difficult and to be honest I got a little frustrated. My tip: definitely freeze the butter if you will try this recipe and I would cut the potato in slices, without cutting all the way through but I would wiggle the knife side to side to open up the space more. You'll see what I mean when you see the post. You could also see the slices in the vlog.

The Banana Bread: I always use this recipe and everyone loves the way it comes out!

The Weekend

The weekend... Never long enough. I'll get straight to the fun!

I spent most of the weekend out and about, we headed to a place called Bonkers on Friday evening with the girls. It's mostly for kids to have a good time, but as you'll see here, I joined in on the fun this time around.

Saturday Emily has her dance class and after that we went to Lawn on D for some outdoor fun, we vlogged a little as well!

Lastly, Sunday...FOOTBALL! & it was also my little cousin's birthday. We headed to the theater to celebrate her big day and watched Hotel Transylvania 2!

In between all of the fun I spent extra minutes here and there organizing my office. It's time to down size on the nail polish and makeup stash. I worked hard on that but I didn't get too far! Any tips or ideas on what to do with the extra stuff that is either opened, swatched and/or used once or twice, leave below in the comments section!

Also, who saw the Super Blood Moon? We were out watching... It sure is a beautiful sight. You just can't get a good photo of something so glorious!

5 Fall pieces I added to my Wardrobe-Haul

Oh Fall, one of my favorite things about you is your style! The layers, the colors, and textures! Recently, I went on a search for some booties for the season. I am a big lover of the riding boot trend, but have yet to own a pair of booties, until recently. I also got a few great deals from JCrew Factory, and H&M always has great finds! I think I did pretty good, I got a pair of jeans, sweatshirt, shirt, scarf and a pair of booties. I still have my eyes on a few pieces, like these Frye Phillip Harness Riding Boot, but shhhhh
I/m excited about these jeans, I already wore them once and paired them with a pair of toms for a casual look. They fit great and were a great find at 29.99. 

Unfortunately, this sweatshirt is sold out (with good reason, 14.99) but there were a ton of other similar one's I got this one in Gray. I love how it fits, it's a bit over sized but for the Fall it will give the perfect look. 

I loved this when I tried it on at the store, it feels so soft and is the perfect size for me. I love the pattern and the colors are just perfection. 

I already own a shirt like this from Old Navy, but it was time for a new one. This one is softer than the one I already have and the color is a little brighter. hey, if you like it get more than one. 

I searched high and low, different stores, different styles and different price ranges also. I found these while shopping with Jose at Nordstrom and LOVED them. I sized down on them and they look great! Can't wait to wear them this weekend.

I'm bringing it back

That's right! With the Fall season upon us I feel it is only right to bring Thankful Thursday's back. What a great way to hold me accountable for thinking positive and looking at the blessings in my life and not focus on what's wrong or what "could be better".

I'd like to call myself a morning person but who am I kidding, it's hard when I have to be somewhere at a certain time (like work). I love being able to get in the car and drive to work. A lot of the ladies in the same work as me either take the train or bus or get dropped off and are then waiting to get picked up at the end of their day. 

I have a few goals to accomplish before I'm 30, I'll be 29 this October. I feel like time is ticking, but hey, I'm alive and healthy! 

I watched the Fault in our Stars last night... If you saw Jose or my snaps on snapchat (vero_var) you would have seen the mess I was... That was hard to watch. People go through that and other problems on a daily basis, while I'm worrying about things that may seem important at the moment. When you take a step back and reflect on what is important, life is pretty great right now.

Happy first day of Fall! It's my favorite time of year! I always feel weird saying that because there are a few things I don't actually care for during this time of the year:
-Cold mornings when I have to get out of bed and don't want to
-It gets super dark out before I am off work 
-Every holiday seems to get rushed

The layering of clothes, my birthday, the fall activities and holiday season make it all better! 

Anywho, I thought it was about time I shared more of our photos from our Puerto Rico trip! I already shared a batch a few weeks ago. Our vlogs are up in a playlist as well!

Fall bucket list

Apple picking is always on my Fall Bucket list, we did that this past Saturday. We go a few times a season because we love it so much. Here are a few more activities to add to your bucket list this year:

-Haunted house date 
Find a haunted house near you, pick a date and invite all of your friends to go. We've done this and it's so fun to go with a big group! We go around my birthday! 

-Leaf picking
This is fun for the kiddos but you can join in on the fun and pick some leaves too. The crunchy leaves are my favorite. 

-Leaf art
After you're done picking the beautiful leaves make art with them, paint them, glue them on paper. Make a collage or a wreath... The possibilities are endless! 

-Pumpkin picking 
Don't just pick apples. Pick a pumpkin! We usually pick one, use it as decor for a week or two, then we carve it, and bake the seeds, then use the pumpkin outdoors as decor. 

-Find a great pair of Fall booties 
Looking for a nice pair of booties to wear this season! Let me know if you know of any! 

-Foliage ride 
New Hampshire is beautiful throughout the year, we have yet to go during the Fall! I can imagine the foliage. This year it's a must! 

-Make apple pie 
Make an apple pie with those apples you picked! I've gone Apple picking every year but never make an apple pie! That's changing this season! 

-Piles of leaves 
Another good one for the kiddos, make piles of leaves and just jump in them, roll around, dance in them... You name it! Just have fun! 

-Bonfires & hot chocolate
Need I say more? 

-Go on a Hayride
Some farms offer them, the haunted house we go to has a Haunted hayride! So fun! 

-Dress up the family 
Halloween is fun for the kids, they dress up and trick or treat... Dress up with them...! 

-Make a scarecrow
How fun would this be! Use your own clothing items and put him in the front yard for all to see! 

-Eat candy corn
Well, because duh! 

-Make a thankful tree
Everyone can take part of this activity. Write down what you are thankful for, or draw something out. Sit around the dinner table one night and talk about what you're thankful for everyday.
